After digging in to her space, I selected three recipes for this week Marathon which are going to treat you all for this week.. Today I sharing healthy salad from Senegalese Cuisine with Tankora masala which is the basic spice mix for their cooking.
Senegalese black eyed pea salad / Tankora Black Eyed Pea Salad
Preparation time: 10 minutesSoaking time: 8 ~ 24 hoursCooking time 30 minutesServes: 4 ~ 6Ingredients:2 cups black eyed peas3 cloves garlic1 red bell pepper, chopped1 large carrot, grated2 teaspoon salt or to tasteFor Tankora spice mix:1 cup roasted peanuts1 teaspoon ground white pepper1 teaspoon ground ginger½ teaspoon cayenne pepperMethod:1.
Wash and soak black eyed pea for 8 hours or overnight. Pressure cook it
for 4 whistle or on a open pot with garlic and 6 cups of water, until
the peas are tender. Once cooked allow it to cool to room temperature.2. Grind the listed spice mix in to fine powder and store it in air tight container.3.
In a large bowl, combine the cooked peas, carrot, bell pepper, lime
juice and ½ cup of the tankora spice mix. Mix until thoroughly
combined. Let rest for 30 minutes and serve.
